Turkey Sweet Potato Minestrone Soup

With the colder weather, I’ve been craving soup lately.  So I made one of my favorites, a recipe I got from my Mom (who makes the best soups!).  It’s healthy, filling, and super easy to make.  It made a perfect post-ride lunch today!

Sweet Potato Turkey Minestrone Soup

Sweet potato turkey minestrone soupIngredients

  • 1 lb ground turkey*
  • 1/2 cup diced onions
  • 1/2 cup diced carrots
  • 3.4c thin sliced celery
  • 3 cups chicken broth (or water)
  • 2 cups diced, peeled sweet potatoes
  • 28oz canned tomatoes (undrained and chopped)
  • 15oz can great northern beans (drained and rinsed)
  • 1 tsp dried oregano
  • salt & pepper
  • 8 cups spinach (chopped)

Directions

Combine turkey, onions, carrots, and celery in a large pot (or dutch oven) over medium-high heat.  Saute for 7 minutes or until turkey is browned.

Add the 3 cups of chicken broth/water, sweet potatoes, tomatoes, beans, oregano, salt and pepper.

Bring to a boil, cover, and reduce heat.  Simmer for about 30 minutes.

Stir in spinach, cook an additional 2 minutes.

*For a vegetarian version, replace ground turkey with another can of great northern beans (or beans of your choice)
